As a culminating activity in 2007, students gathered at the Bishop Center to present their service learning projects. At that time, students created book thongs and festive flags. The books thongs were donated to St. Joseph's Living Center and Mansfield Center for Nursing and Rehabilitation. The festive flags were donated to Windham Recreation for distribution at the Boom Box Parade. Students from Parish Hill High School donated canned food items to the Plainfield Food Pantry.
The projects included:
- Students involved in Mosaic visited an elementary school to read to the third graders on March 2, 2006, for Read Across America Day.
- Students discussed bullying with elementary school students. Students read Hey, Little Ant and led a discussion on bullying. High school students created posters about bullying with the younger students.
- Students planned, prepared and delivered a meal to the soup kitchen. Other students planned and helped facilitate the Jump Rope for Heart Program and others cleaned and improved the Nature Trail on the property of a local school.
- Students from Windham Technical High School participated in a Lemons and Limes training and they presented the training to fifth graders at Windham Middle School and students at Maple Street School in Rockville.
- Parish Hill High School presented a "Diversity Day" for the seventh grade in May. Students began the day with ice breakers and food from a variety of nations. Students participated in multi-cultural hands-on activities. The video "Let's Get Real" was shown and a discussion on bullying was facilitated by the high school students which will include role playing.
- Another group of students created posters to encourage the characteristics of the Positive Behavior Program.
